Yellow Cake

Servings 12 servings


  • 3 cups white all-purpose flour
  • 2 cups sugar
  • 1 T baking powder
  • 1 1/2 cups milk
  • 1/2 cup margarine or butter, softened
  • 1 1/2 t vanilla
  • 2 eggs


  • In a bowl, combine the flour, sugar and baking powder
  • Add milk, margarine and vanilla, beat on low speed in mixer or with hand blender until combined
  • Beat on high for 2 minutes
  • Add eggs and beat for a further 2 minutes
  • Pour into two greased and floured 9 x 1 1/2 inch pan
  • Bake at 375° for 25-30 minues or until a toothpick inserted in the middle comes out clean
  • Remove from oven and cool on wire rack for 10 minutes then remove from pan
  • Cool completely on wire racks


I use this same recipe to make cupcakes.  I line the muffin pan with paper liners and fill about 3/4 full.  Then I bake for 18-23 minutes.  Once removed from the oven, cool as above.
