This is one of my absolute favourite breads from our bread machine cookbook. It’s made with molasses and cornmeal, giving the bread a bit of a nutty flavour and a great texture!

The recipe below is from “Canada’s Best Bread Machine Baking Recipes” by Donna Washburn and Heather Butt.

New England Anadama Bread

Prep Time 10 minutes
Cook Time 3 hours 50 minutes
A bread machine recipe for a lovely bread with a taste of molasses! This recipe is for a 2lb (1kg) load.

Equipment

  • Bread machine

Ingredients

  • 1 1/2 cups water
  • 1/4 cup skim milk powder
  • 1 1/2 tsp salt
  • 1/4 cup molasses
  • 2 tbsp shortening
  • 3 1/2 cups all-purpose white flour
  • 1/2 cup cornmeal
  • 1 1/2 tsp bread machine yeast

Instructions 

  • Measure ingredients and add to baking pan in the order above
  • Select Basic Cycle

Notes

Variation:
This loaf has a strong molasses flavour.  If you don’t want that, substitute 1 T of brown sugar for 1 T of the molasses.
